Whether you hope to master the art of Cajun/Creole cuisine, or just want to learn to prepare a delicious, authentic dish, Vermilionville's Cooking School offers that opportunity. It's "History on the Table" classes will teach you recipes like our Cajun/Creole Mammas taught us to make, featuring authentic roux-based dishes, the staple of for dishes like gumbo and fricassee. Variations of Etouffee, jambalaya, bread pudding and other specialties broaden the curriculum. From andouille and okra to crawfish and corn macque choux, menus vary according to the interests and palates of our students. Stories of the origins of these recipes, the gathering of ingredients, and the social celebrations associated with these meals create an entertaining and historically educational experience. Our cooking classroom seats up to 45 people with practice tables and chairs. Classes are available daytime or evening, by reservation.
