“Eula Mae’s Cajun Kitchen”

Eula Mae lived on Avery Island, the home of Tabasco, for more than 50 years. There, she managed the Avery Island Commissary and the Tabasco Deli and cooked for the special McIlhenny family events. Her co-author, Marcelle R. Bienvenu, also wrote “Who’s Your Mama, Are You Catholic, and Can You Make a Roux.” Both are essential cookbooks in a Cajun kitchen, discussing how the region’s food and culture are so closely connected.
